The name is “Nuestra Señora del Rosario” and this cooperative has around 300 members, most of them small farmers. It produces the oil that we bring to Germany and to Slovenia. Every process is take into account with the goal to preserve its high quality and flavor.
Harvest is between November to March approximately. Right after taking the olive to the hopper, it goes through a cleaning process where all the dirtiness and leaves that are taken out. Afterwards, the olive is milled. Then, it goes to the mixers, and from there to the centrifuge to go eventually to the tanks.
