Recipe ensalada malagueña Serves: 4
tuna or cod
Extra virgin olive oil
salt and pepper
Bring a large pot of water to a boil. Add salt and the potatoes and cook until tender but still firm, about 20 minutes.
Place eggs in a saucepan and cover with cold water. Bring water to boil for about 10 minutes. When ready, cool for easily peeling.
Peel and chop the potatoes and the hard eggs and add it in a medium bowl, then peel the oranges and chop it too and the chives. Add to the bowl all together with the tuna and the olives and season with salt, pepper and the cumin if you like, then mix well adding a drizzle of olive oil and serve it.
